I've been hungry for peanut butter cookies and have a recipe for some chocolate peanut butter ones that I really like, so I decided to make them today.
Unfortunately, the cookies didn't turn out quite right.
The cookies are made with a peanut butter center that is wrapped in a chocolate peanut butter dough. Then they are smashed with a glass. The result is supposed to be a solid, chocolate-looking cookie with a surprise peanut butter center.
For some reason, my chocolate dough was too dry, and when I smashed the cookies, it cracked and the peanut butter came through.
I really have no idea why this happened. I'm just glad they are still edible. In fact, they are quite delicious. Most probably wouldn't even think there was something wrong with them.
Here is the recipe. I'll have to try them again soon in order and try to get it right.
Chocolate Surprise Cookies
1/2 cup butter
1/2 cup sugar
1/2 cup brown sugar
1/4 cup peanut butter
1 egg
1 tsp vanilla
1 1/2 cups flour
1/2 cup cocoa
1/2 tsp baking soda
3/4 cup peanut butter
3/4 cup powdered sugar
Cream butter, sugars and 1/4 cup peanut butter. Add egg and vanilla. Mix well. Mix flour, cocoa, and soda and add to creamed mixture. Stir well. Divide into 24 balls (1" each) Flatten each ball into a 3" circle.
Combine remaining peanut butter and powdered sugar. Divide into 24 balls. Place on flattened circle. Bring edges of circle around the peanut butter ball. Reshape as necessary to cover the peanut butter ball. Place cookies seam side down on baking sheet. Flatten each cookie with the bottom of a glass dipped in sugar. Bake at 375 degrees for 9-10 minutes or until set.
